She bought a big salmon from Costco, even though I said I don't like the salmon steak.
So I remember the FB posts which use Costco salmon for sushi.
Without expectation, it turned out good.
- Salmon Prep: Sprinkle coarse salt on the salmon. Apply cooking wine on the salmon, Rest in the refrigerator 30-40min, Wash with Iced cold water, Suck out water from the salmon with kitchen paper towel. You can keep the salmon in an airtight container in the refrigerator 2day maximum.
- Rice prep: cooled cooked rice + vinegar 2 + Sugar 1+ Salt 0.3
- Cho-gochu-jang: 2 Korean Chilli pepper paste 2 sugar (1 sugar + 1 sweet syrup)+2 vinegar +1 minced garlic and (sesame seed and sesame oil a little bit, maybe 0.5 each)
